Summer in Phoenix has been slightly more bearable in comparison to recent years.  Swim lessons have been steady and I’m loving the relationships I build with the families I get to teach year after year.  In the spirit of summer and all the fun the little ones bring to my days, I wanted to share something with you that captured both.

These fun, flavored ice cubes are made with the ice cubes trays by Ikea.  I love the different shape options.  I’m betting you could elicit the help of your little ones and they’d really enjoy the resulting shapes.  And given their size, they don’t take long to freeze so near-instant gratification is an added bonus!  As fun as they are for children, you will love them too for the delicious flavor they infuse into your drinks on hot days.

Star-Shaped Coconut Mint Ice Cubes

  • 1 whole young coconut, flesh and water
  • pinch of salt
  • 5 mint leaves, approx.
  • 1 ice cube tray

Directions:

  1. Crack open a young coconut and place both the flesh and coconut water into a blender with a pinch of salt.  Blend on high for 30 seconds to combine well.  Set aside.
  2. Chop mint leaves finely and place in ice cube trays, evenly dispersed.   Pour coconut mixture over the mint leaves to fill each ice cube slot.  There may be extra liquid, depending on what your coconut yielded.
  3. Freeze until solid and add to your favorite beverage!

Fish-Shaped Pomegranate Blueberry Ice Cubes

  • 1 c. pomegranate juice
  • small handful of blueberries
  • 1 ice cube tray

Directions:

  1. Scatter blueberries throughout the ice cube tray, careful not to overstuff them.
  2. Fill each to the top with pomegranate juice.  Freeze until solid and enjoy!

Heart-Shaped Lemony Ice Cubes

  • 1 c. fresh-squeezed lemon juice
  • zest of one lemon
  • 1 ice cube tray

Directions:

  1. Scatter lemon zest throughout the ice cube tray.
  2. Fill each to the top with lemon juice. Freeze until solid and enjoy!

Flower-Shaped Cherry Limeade Ice Cubes

  • 1 c. limeade
  • handful of cherries, pitted and halved
  • 1 ice cube tray

Directions:

  1. Place one half cherry in each ice cube slot.
  2. Fill each to the top with limeade.  Freeze until solid and enjoy!

Oh my! These are so cute! 😀 I see the fish and immediately think of making blueberry jelly [very firm jello] candy in those trays! 😀

Tara, that's a great idea! That'd make a sweet snack for little kiddos! 🙂
