I was given a box of extremely delicious raw goji berry chocolate recently and I haven’t been able to stop thinking about it since I ran out!  Given that it was both not available locally AND had a steep price point ($25 for ~1/2 lb), I had no other choice but to use my former chocolatier-ing skills and recreate it. 😏

Cacao butter can be a pain to work with (and consume) since it’s hard at room temperature so the coconut oil helps to soften it up and offer a creamier truffle texture.

I love the combo of roots and powders here!  Mesquite is a new favorite that blends so well with the cacao, maca, and lucuma (it is equally delicious in my morning bulletproof).  It gives the chocolate an earthy, hearty taste without tasting like trees. 😁

Earthy Goji Berry Chocolate Truffles

Yields: 18 truffles

150 grams softened coconut oil

100 grams melted (but not hot) cacao butter

1/4 c. raw honey

2 tsp. vanilla extract

3/4 c. unsweetened shredded coconut

1/4 c. unsulphured goji berries

2 tbsp. raw cacao nibs

1/2 c. raw cacao powder

1/4 c. maca powder

2 tbsp. mesquite powder

2 tbsp. lucuma powder

1 tsp. sea salt

Directions:

Whisk the coconut oil and cacao butter together in a large bowl.  Add the remaining ingredients and stir with a wooden spoon until everything is mixed together well (this will take a few minutes).

To portion in truffle shapes, cool the mix in the fridge until partially chilled (fully chilling will make it impossible to scoop) and use a cookie scoop to portion.  If you are feeling lazy, you can also spread the mixture out onto a baking sheet, freeze until solid, and break into rough bark-like pieces.

Store in the refrigerator for up to 3 months.  Remove from the fridge 5-10 minutes before enjoying.

Since cacao butter comes in chunks, it is easier to use by measuring.
