While we may not be having any wild parties this year (not knowing many people here in Portland and all), I hope very much that you all party it up for us. So Happy New Year’s! I’m feeling like 2015 has some great things in store.
Grain-Free Dill & Caraway Chia Crackers
1 ½ c. filtered water
1 clove fresh garlic, minced
2 tsp. dried caraway seeds
1 tsp. dried dill
2 tsp. dried minced onion
1 tsp. sea salt
½ tsp. ground pepper
¾ c. chia seeds
1 c. raw sliced almonds
1 c. raw pepitas
½ c. sunflower seeds
Directions:
Preheat oven to 325F. Have ready a large baking sheet lined with a silpat mat or parchment paper (silpat will work better).
Whisk together the water, garlic, dill, onion, salt, and pepper. Add in the chia, almonds, pepitas, and sunflower seeds. Stir well and let sit for 3-5 minutes (or until all the water is absorbed). Stir well again.
Spread the mixture onto the lined sheet pan in a very thin layer, about ¼” thickness. It should cover nearly the whole pan. Bake for 40 minutes. Remove from the oven and flip the entire sheet of cracker over. Return the pan to the oven and bake another 30-40 minutes, or until golden brown on top. Allow the pan to cool completely before breaking the sheet up into bite-size pieces.
