Continuing the annual tradition of a new cookie recipe for the holidays!
I’ve had thumbprints on my mind for maybe 2 years now? Ha, so it was about time to make it happen!
Once the dough was made and I’d tried the thumbprints (very much a win), the texture totally reminded me of sugar cookies. So yeah, this crazy easy recipe doubles as sugar cookie dough and indubitably linzerrrssssss. 🤗
I opted for using almond extract in the sugar cookie variation cause that’s classic and vanilla extract in the thumbprints but feel free to switch it around based on what your preference is.
I can’t stress enough to slightly undercook them either way you go. Soft and fluffy is the perfect texture for both.
(unless you are a person who likes crispy sugar cookies, in which case we probably can’t be friends)
I used Simple Mills vanilla frosting with JR Watkins natural food coloring for the sugar cookies. I love that despite the use of cane sugar, Simple Mills frosting is lower glycemic due to the addition of monk fruit extract.

I used St. Dalfour 100% fruit jam for the thumbprints, in flavors apricot and four berries.
Both variations freeze & thaw extremely well. These are not GAPS-friendly but I wanted a little Christmas sugar so I’m saving these for this coming weekend. (per usual, freezing cookies is life)
