Homemade Almond Milk

This raw almond milk takes it to a whole new level.

I love this recipe.  We don’t eat a lot of dairy so I’m always looking for ways to incorporate a cow-milk substitute.  I don’t know about you but that list of ingredients on many dairy-free carton almond milk never sat right with me.  The lovely almond flavor can be accentuated with almond extract or just vanilla is delicious too.  It’ll need to be shaken before each use since no emulsifier is used (usually a gum or lecithin in store-bought brands) but I don’t think you’ll mind.

Homemade Raw Almond Milk

1/2 cup raw almonds, soaked 4+ hours

4 cups filtered water

2 t. raw honey (optional)

1 t. vanilla extract (or sub almond ext.)

pinch sea salt

Directions:

In a Blendtec (or other high-powered blender), blend all ingredients on high speed for 2 minutes.  Optional:  strain through cheesecloth, a fine sieve, or nutmilk bag.  I sometimes skip this step because I don’t mind the small pieces that remain.
