Once I had reintro’d both cacao and nut butters, I became somewhat fixated on creating a GAPS-friendly brownie.
I was about 4 rounds deep with many pans of soggy brownies using coconut flour to bind them (note: soggy = bad, gooey = good) when my brookie recipe started whispering to me to leave out the flour completely. Duh, Angela.
Suddenly, everything aligned perfectly. The brownie sets up perfectly, with a little crumb to it. And the swirl keeps it nice & gooey. Bonus: the batter can be made entirely in the blender!
